Quick and Easy Dinner

Sticking to quick and easy…..

Here’s what you need:

2-4 chicken breasts cut into bite sized pieces (depends on how many people you are feeding)

1/2 – 1 whole white onion sliced into strips (the more chicken, the more onion)

Sliced mushrooms, as many as you want (I get the pre-sliced container at Sams Club)

1 tablespoon Ghee/Coconut Oil/Olive Oil

Put Ghee/Oil in a frying pan on medium heat. Once hot add the chicken and cook until almost done, then add onion and mushrooms. Stir together and let simmer on low until onions are clear.

My husband, who does not eat Paleo, loves this as an open faced sandwich with a whole wheat hoagie roll and a slice of Havarti cheese.
I just eat it out of a bowl. So so good.
